Healthy Quick Street Tacos with Roasted Veg Sauce

Best tacos you will make at home with a savable salsa and a roasted sauce you can make from various veggies and use in many other dishes!

Start by making your salsa. You’ll need to finely dice tomatoes, jalapenos, onions, cucumbers, and mango. Next drizzle on some olive oil, sprinkle with salt pepper and sugar. DONE!

You can easily use left over or rotisserie chicken. For this recipe I baked and pulled chicken that I seasoned with salt, pepper, and paprika. 

You can use any mixture of your favorite veggies. I used celery, carrots, and onions. In a pan or in the oven you can roast the veggies with olive oil, salt, pepper, and Hoisen sauce. If you don’t have Hoisen sauce that’s okay, this is really versatile. Use soy sauce or any other sauce you have on hand. 

Lastly, in a blender or food processor, blend with 2 heaping tablespoons of butter and olive oil until smooth and glossy. Now all that’s left is to assemble everything together in any order you’d like. For tortillas I used store bought street tacos but really, any work and it’s also great as a taco bowl without a tortilla all together, just add some rice!
